  • High Priority – Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw chicken placed behind raw shrimp and raw beef in flip top cooler near front counter. Operator put chicken in front. Emailed operator Safe Storage flyer which she printed and hung up on walk-in cooler door at time of inspection. **Corrected On-Site**
  • High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. cooked beef (53°F – Cold Holding) Observed in flip top cooler on left side of front counter. Observed bowl of cooked beef sitting in a metal pan on top of cooked beef in another metal pan. Since airflow is not able to reach the metal pan of the cooked beef, it will be out of temperature. Operator moved pan to reach-in cooler. **Corrective Action Taken** **Repeat Violation**

Left side has an ambient temperature of 39°F 4 drawers under flat top: cooked cabbage (68°F); raw fish (70°F); raw salmon (70°F); shawarma (70°F); operator states items have been in unit for 1 hour. Unit has an ambient temperature of 70°F. Operator placed ice on items. Monitored unit for 1 hour. No changes in ambient temperature 2 door middle flip top: tomato sauce made in house (44°F-49°F); diced tomatoes (45°F-48°F); tsaziki sauce (53°F); cheese (49°F); gyro meat (53°F); raw chicken (50°F); raw scallop (47°F); raw shrimp (50°F). Unit has an ambient temperature of 49°F. Operator moved items to working cooler. Monitored unit for 1 hour. No changes in ambient temperature **Repeat Violation** – From follow-up inspection 2021-10-07: Left 3 door: items temped 35°F-43°F. Establishment using ice to keep items cold.
